Argentina’s Black Bean & Rice Specialty
This Latin American favorite is famous for its simplicity and natural flavors; the sweet bell pepper and fresh lettuce blend beautifully with rich cheese, delicious with bright tomatoes. Cheese is non-dairy of course, all of my dishes are gluten, wheat, dairy, meat and (mostly) soy free.

Ingredients (1 Portion Meal)
1 Clove Garlic
Spices to taste: paprika, chili powder
1 Bunch of Cilantro
1 Red Bell Pepper
1 Cooked Black Beans
2 Leaves Iceberg Lettuce
1 Cup Cooked Brown Rice
30g Non-Dairy Cheese
2 tablespoons Salsa
How We Make It At WFV
Slice bell pepper and chop lettuce. Peel, smash and chop garlic. Pour a few tablespoons of broth into a pan and cook over medium heat until it bubbles. Add spices, fry at medium heat. Stir bell pepper into pan, add rice and beans, cook for a few minutes stirring occasionally with wooden spoon.
Arrange lettuce on a plate and top with cooked food. Grate cheese onto the meal. Serve with salsa. For extra zest, add lemon juice and sprinkle cracked pepper to taste.
